Weekend Dinner Idea: Lamb Stew Recipe by PapaFresh

This is a chop-chop recipe (assuming basic cooking sense, which I may or may not have at times - lol tbh I just shout out for mom and dad if I need help cc: how to cut and clean a Sotong)


For 2 pax

Cooking time: Approximately 45mins


Ingredients:

300gm Beef or Lamb, Lean and Chunked (the tougher the cut, the longer the cooking time,)

1 Pandan Leaf, tied to a knot

2 Carrots

2 Potato

1 Star Anise

1 inch Cinnamon Stick

2 Cardomom Seeds

1-inch Ginger pounded

4 cloves of garlic, pounded

2 Big Red Onion, pounded

2 tablespoon Cooking Oil of your choice

Salt & Pepper to taste

Optional: Beef Stock

For water - just enough to cover your ingredients and cook your meat




Steps:

Grab a big pot, pour cooking oil and sautee pounded ingredients and dry spices (Star Anise, Cardamom, Cinnamon Stick) until it smells fragrant.

On Medium Heat - Pop in the meat and give it a toss. Pour in water, enough to submerge the meat. Throw in the Pandan Leaf, Salt & Peppa.

Cover the pot and bring to boil.

Once Meat is tender, pop in all the veggies. If you need more water, please proceed. Idea is to get the potatoes and carrots to a "melt in mouth" texture.


If you need to modify and add more salt & pepper - no judgement here.


Idea: Wanna eat with rice? Serve with Chilli Kicap Sauce (Pound 5 chilli padi, half clove garlic and Sweet Soya Sauce)


We had ours with French Loaf the other day cos we felt a little fancy. Also, photos may differ cos PF bought lamb chops.
